Minty Lemon Soda Recipe - The Washington Post
Natural juice-based drinks help maintain hydration in summer's heat. This one is gently sweetened with honey, flavored with lemon and spiked with a hint of mint.
Use more lemons if you want a stronger citrus flavor, fewer if you want more of a honey-mint taste.
The mint leaves need to steep in the cooled syrup for up to 4 hours.

Directions
Step 1
In a small nonreactive saucepan over medium-high heat, heat the honey, water, and lemon juice and zest until the mixture reaches a low boil. Remove from the heat and let cool to room temperature.
Step 2
Stir in the mint leaves, then cover the saucepan and refrigerate for up to 4 hours.
Step 3
Strain the mixture into a jar or another lidded storage container; discard the solids. Cover and refrigerate until needed.
Step 4
To serve, measure 1 tablespoon of syrup into a glass and add 1 cup of sparkling water. Stir to combine. Add ice, if desired. Taste, and add syrup or sparkling water, as needed. Garnish with a sprig of mint and serve.
